Grandmother's Buttermilk Biscuits

Ingredients
- 2 cups all-purpose flour, plus more for dusting
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup unsalted butter, very cold, cubed
- 3/4 cup cold buttermilk
- 2 tablespoons melted butter, for brushing
Steps
- 1Preheat oven to 450°F. Whisk together flour, baking powder, baking soda, and salt.
- 2Cut the cold butter into the flour with your fingers or a pastry cutter until the mixture looks like coarse crumbs, with a few pea-sized pieces left.
- 3Pour in the buttermilk and stir just until the dough comes together — it will look shaggy. Don't overwork it.
- 4Turn the dough onto a floured surface, pat into a 1-inch-thick rectangle, and fold it over on itself two or three times. Pat back out to 1 inch thick.
- 5Cut straight down with a biscuit cutter — no twisting, or they won't rise straight. Place biscuits touching on a baking sheet.
- 6Brush tops with melted butter and bake 12-15 minutes, until golden on top.
