Ingredients
- 1 whole chicken, or 2 lbs bone-in thighs
- 8 cups chicken broth
- 1 onion, diced
- 3 carrots, sliced
- 3 celery stalks, sliced
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 3/4 cup milk
- 2 tablespoons melted butter
Steps
- 1Simmer chicken in broth with onion, carrots, and celery until cooked through, about 25 minutes. Remove chicken, shred, and set aside.
- 2Whisk flour, baking powder, and salt. Stir in milk and melted butter to form a soft dough.
- 3Bring the broth back to a gentle simmer. Drop the dough by spoonfuls directly into the pot.
- 4Cover and simmer 15 minutes without lifting the lid, so the dumplings steam through.
- 5Stir the shredded chicken back in, season with salt and pepper, and serve hot.
